Summer meal planning is the hardest meal planning, amiright? Who wants to cook in the summer? What time is it? What day is it? I don’t know. On the positive side, summer food is the ultimate fast food. So much great produce! The grill is calling my name! Who needs to even cook? Make a party tray and call it done. So, yes, summer meal plans are hard but summer food is easy so it all evens out.
Also, if you’re not on the leftover bandwagon what is wrong with you? Leftovers are life. The only time I don’t plan to make enough for leftovers is when I cook fish. I just think fish is a one and done sort of deal but that’s personal preference, not a hard and fast food safety rule. You do you.
Here’s what I’m cooking (not cooking) this week for our family of 5.
Monday (LC): Leftover grilled sausage with roasted veggies. Rice for the kiddos, extra veggies for the adults on low carb day.
Tuesday (LC): Taco salad with guacamole
Wednesday: Salmon croquettes with roasted potatoes and salad
Thursday: Grilled bbq chicken thighs and legs with grilled veggies and dinner rolls
Friday: Clean out the fridge leftover night!
Saturday: I’m going to try out this Cold Pork Rice Noodles with Cucumber and Peanuts from the New York Times cooking site. Looks tasty; I’ll report back.
Sunday: It’s the sabbath day in our house. Eat out for lunch, leftovers for dinner. Rest.
